Peanut Butter Choc Chunk Protein Cookies
These cookies are super easy. Perfect for a post-workout/mid-afternoon/anytime chocolatey snack. All the goodness of a cookie with a big ol’ hunk of chocolate in the centre – what more could you want?!
Ingredients
- 1/2 cup creamy peanut butter (smooth)
- 1/4 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 flax egg (1 tbsp ground flaxseed + 2 tbsp water)
- 3 tbsp soy milk
- 1/3 cup vanilla protein powder (I used KIN Nutrition Vanilla ‘No Whey’)
- 3 tbsp gram flour
- 1/4 tsp bicarbonate of soda
- 1 bar dark chocolate
Method:
- Preheat the oven to 180C and line a baking tray with baking paper.
- Cream together the peanut butter and sugar using an electric hand whisk until smooth.
- Add in the salt, vanilla extract, flax egg and soy milk and whisk again until completely combined.
- Fold in the protein powder, gram flour and bicarbonate of soda – it should produce quite a thick dough.
- Roll the dough into approximately 9 balls. Place on the baking tray, flatten slightly and press a square of dark chocolate into the centre.
- Bake for 12 – 15 minutes until golden brown. Leave to cool on the baking tray for at least 5 minutes before transferring to a cooling rack.
